4 cups watermelon, cubed and seeds removed

1 tablespoon fresh ginger, grated

1 teaspoon vanilla extract

2 tablespoons lime juice (freshly squeezed)

1-2 tablespoons honey or agave syrup (adjust for sweetness)

1 cup sparkling water or club soda

Ice cubes

Fresh mint leaves and lime wedges for garnish

Instructions
 

Begin by placing the watermelon cubes in a blender. Blend until smooth, then strain through a fine mesh sieve into a large bowl or pitcher to remove the pulp; you'll need about 3 cups of watermelon juice.

    Whisk in the grated ginger, vanilla extract, lime juice, and honey (or agave syrup) into the watermelon juice until well combined.

      Chill the mixture in the refrigerator for at least 30 minutes to allow the flavors to meld.

        Once chilled, fill glasses with ice cubes and pour in the watermelon mixture, filling each glass about two-thirds full.

          Top each glass with sparkling water or club soda for a refreshing fizz, stirring gently to combine.

            Garnish with fresh mint leaves and lime wedges to add a fresh aroma and vibrant color.
