1 lb (450g) beef sirloin, thinly sliced

2 large yellow onions, thinly sliced

4 cloves garlic, minced

2 tbsp olive oil

1 cup beef broth

1 tbsp Worcestershire sauce

1 tbsp balsamic vinegar

1 tsp dried thyme

1 tsp sugar

Salt and pepper, to taste

2 cups cooked rice (white or brown)

1 cup shredded Gruyère cheese (or Swiss cheese)

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Onions: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and sprinkle with a pinch of salt and sugar. Cook, stirring frequently, until they are caramelized and softened, about 15-20 minutes. Remove from the skillet and set aside.

    Brown the Beef: In the same skillet, add the remaining tablespoon of olive oil. Increase the heat to medium-high. Add the sliced beef sirloin and cook until browned, about 3-4 minutes. Season with salt, pepper, and dried thyme.

      Add Garlic and Deglaze: Lower the heat to medium. Add the minced garlic to the skillet, stirring for about 30 seconds until fragrant. Pour in the beef broth, Worcestershire sauce, and balsamic vinegar, scraping the bottom of the skillet to deglaze.

        Combine and Simmer: Return the caramelized onions to the skillet and stir them into the beef mixture. Allow everything to simmer for 10-15 minutes so the flavors can meld and the sauce thickens slightly. Taste and adjust seasoning as necessary.

          Assemble the Dish: Serve the savory beef mixture over a bed of cooked rice, ensuring each serving gets plenty of the onion sauce. Sprinkle shredded Gruyère cheese on top.

            Melt the Cheese: If desired, place the assembled dish under the broiler for 2-3 minutes until the cheese is bubbly and slightly golden.
