Ingredients

1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

1/2 cup cornstarch

2 teaspoons black pepper

1 teaspoon sea salt

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon cayenne pepper (optional, for heat)

3 tablespoons vegetable oil (for frying)

3 cloves garlic, minced

1 small onion, thinly sliced

2 scallions, chopped

1 bell pepper (red or green), sliced

Fresh cilantro leaves (for garnish)

Instructions

Marinate the Chicken: In a bowl, combine the chicken pieces with garlic powder, onion powder, sea salt, and black pepper. Let it marinate for at least 30 minutes to infuse flavors.

Prepare Cornstarch Coating: Place the cornstarch into a shallow dish. A pinch of cayenne pepper can be added for extra heat if desired.

Coat the Chicken: Dredge each marinated chicken piece in the cornstarch, ensuring an even coating. Shake off any excess cornstarch.

Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.

Fry the Chicken: Add the coated chicken pieces in batches to the hot oil, ensuring not to overcrowd the pan. Cook for about 4-5 minutes per side, or until golden brown and cooked through. Remove chicken and drain on paper towels.

Sauté Aromatics: In the same skillet, add a little more oil if necessary, then add the minced garlic and sliced onions. Sauté for 1-2 minutes until fragrant.

Add Vegetables: Stir in the sliced bell pepper and cook for another 2-3 minutes until they are just tender but still crisp.

Combine Chicken and Vegetables: Return the fried chicken pieces to the skillet with the sautéed vegetables. Toss everything together, allowing the chicken to soak up flavors for about 1-2 minutes.

Finish and Serve: Garnish with chopped scallions and fresh cilantro leaves. Serve your zesty salt and pepper chicken hot, alongside steamed rice or noodles.
