2 cups fresh strawberries, hulled and halved

2 tablespoons honey or maple syrup

1 tablespoon balsamic vinegar

1 cup ricotta cheese

1 teaspoon vanilla extract

1 teaspoon lemon zest

4 slices of ciabatta or your bread of choice

Olive oil, for drizzling

Sea salt, to taste

Fresh mint leaves, for garnish (optional)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a bowl, combine the halved strawberries, honey or maple syrup, and balsamic vinegar. Toss until the strawberries are well coated.

      Spread the strawberries in a single layer on a baking sheet and roast in the oven for 20 minutes, or until they are soft and slightly caramelized.

        While the strawberries are roasting, in another bowl, mix together the ricotta cheese, vanilla extract, and lemon zest until smooth and creamy. Optionally, you can use a hand mixer for a fluffier texture.

          Heat a grill pan or non-stick skillet over medium heat. Brush the bread slices lightly with olive oil on both sides and toast until golden and crispy, about 2-3 minutes per side.

            Once the strawberries are done roasting, remove them from the oven and allow them to cool slightly.

              Assemble the toast by spreading a generous layer of whipped ricotta on each slice of toasted bread.

                Top with the roasted strawberries, drizzling any extra juices from the baking sheet over the top.

                  Sprinkle with a pinch of sea salt and garnish with fresh mint leaves, if desired.

                    Serve immediately while the toast is still warm and enjoy the delightful combination of flavors!
