Roasted Broccoli and Carrots – Easy Crispy Oven Roasted Veggie Side

2 cups broccoli florets

2 cups baby carrots, halved lengthwise

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon balsamic vinegar (optional for a tangy finish)

Fresh lemon juice for drizzling (optional)

Grated Parmesan cheese (optional for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Veggies: Wash and cut the broccoli florets into bite-sized pieces. Halve the baby carrots lengthwise to ensure even cooking.

      Mix the Seasoning: In a large mixing bowl, combine the olive oil, garlic powder, onion powder, paprika, salt, and black pepper. This will create a flavorful oil for roasting.

        Toss the Veggies: Add the broccoli and carrots to the bowl with the seasoning. Toss everything together until all the veggies are evenly coated with the oil mixture.

          Arrange on Baking Sheet: Spread the seasoned broccoli and carrots in a single layer on a baking sheet. Be sure not to overcrowd them for maximum crispiness.

            Roast: Place the baking sheet in the preheated oven and roast for about 20-25 minutes or until the vegetables are tender and crispy, stirring halfway through for even cooking.

              Optional Glaze: In the last 5 minutes of roasting, drizzle the balsamic vinegar over the veggies for an extra burst of flavor.

                Serve: Once done, remove the vegetables from the oven. For a bright finish, drizzle with fresh lemon juice and sprinkle with grated Parmesan cheese if desired.
