Roasted Beets and Carrots with Burrata Salad

2 medium beets, peeled and cut into wedges

3 large carrots, peeled and cut into sticks

2 tbsp olive oil

1 tsp salt

1/2 tsp black pepper

1 tbsp balsamic vinegar

4 cups mixed greens (arugula, spinach, or baby kale)

1 ball burrata cheese (about 8 oz)

1/4 cup walnuts, toasted and chopped

Fresh herbs (basil or parsley), for garnish

Instructions
 

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

    Prepare the Vegetables: Toss the beet wedges and carrot sticks in a large bowl with olive oil, salt, and black pepper until they are well-coated.

      Roast the Vegetables: Spread the vegetables evenly on a baking sheet lined with parchment paper. Roast in the preheated oven for about 25-30 minutes, or until the beets are tender and caramelized, stirring halfway through for even cooking.

        Prepare the Salad Base: In a large salad bowl, combine the mixed greens and drizzle with balsamic vinegar, tossing gently to coat.

          Assemble the Salad: Once the roasted beets and carrots are done, allow them to cool slightly. Arrange the roasted vegetables over the mixed greens.
