2 cups fresh mint leaves, packed

1 cup whole milk

2 cups heavy cream

3/4 cup granulated sugar

1 teaspoon pure vanilla extract

1/4 teaspoon salt

5 large egg yolks

Prepare the Mint Infusion: In a medium saucepan, combine the fresh mint leaves and whole milk. Heat over medium heat until steaming but not boiling. Remove from heat and let steep for about 30 minutes to extract the mint flavor.

    Mix Sugar and Egg Yolks: Meanwhile, in a mixing bowl, whisk together the egg yolks and sugar until the mixture becomes pale and slightly thickened (about 2-3 minutes).

      Create the Base: Slowly pour the warm mint-infused milk into the egg yolk mixture, whisking constantly to temper the eggs and prevent them from scrambling.

        Cook the Custard: Return the mixture to the saucepan over medium heat. Stir constantly with a wooden spoon or spatula until the mixture thickens enough to coat the back of the spoon (about 5-7 minutes). Do not let it boil.

          Strain and Chill: Remove the saucepan from heat and strain the mixture through a fine-mesh sieve into a large bowl, discarding the mint leaves. Stir in the heavy cream, vanilla extract, and salt.
