1 ½ cups all-purpose flour

1 tablespoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1 tablespoon cocoa powder

1 cup buttermilk

½ cup granulated sugar

2 large eggs

2 tablespoons vegetable oil

2 tablespoons red food coloring

1 teaspoon vanilla extract

1 cup fresh strawberries, chopped

4 oz cream cheese, softened

½ cup powdered sugar

2 tablespoons milk

½ teaspoon vanilla extract (for drizzle)

Instructions
 

Make the Pancake Batter: In a large mixing bowl, sift together the flour, baking powder, baking soda, salt, and cocoa powder. In another bowl, whisk together the buttermilk, granulated sugar, eggs, vegetable oil, red food coloring, and vanilla extract until well combined.

    Combine and Fold: Slowly pour the wet ingredients into the dry ingredients, gently folding them together until just combined. Do not overmix. Fold in the chopped strawberries until evenly distributed.

      Cook the Pancakes: Preheat a non-stick skillet or griddle over medium heat and lightly grease it with butter or cooking spray. Pour ¼ cup of the pancake batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges appear set, about 2-3 minutes. Flip and cook for another 1-2 minutes until golden brown. Repeat with the remaining batter.

        Prepare the Creamy Cheese Drizzle: In a mixing bowl, use a hand mixer to beat the softened cream cheese until smooth. Gradually add the powdered sugar and continue mixing. Add the milk and vanilla extract, mixing until you reach a smooth, drizzleable consistency.

          Serve: Stack the pancakes on a plate and generously drizzle the creamy cheese mixture over the top. Garnish with additional fresh strawberries, and enjoy your delightful breakfast!
