Ingredients

3 ripe bananas, mashed

1/2 cup unsalted butter, softened

1/2 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

1/2 cup sour cream

1/2 cup chocolate chips (optional)

For the Rebel Float Frosting:

1 cup heavy whipping cream

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 tablespoon milk

1/2 cup crushed ice cream sandwiches (or frosty-inspired ice cream treat)

Colorful sprinkles (for decoration)

Instructions

Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper.

In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.

Add the mashed bananas to the mixture and mix until well combined. Then, add the eggs one at a time, mixing thoroughly after each addition, followed by the vanilla extract.

In a separate bowl, whisk together the flour, baking soda, salt, and ground cinnamon.

Gradually incorporate the dry ingredients into the banana mixture, alternating with the sour cream. Stir just until combined. If you’re using chocolate chips, fold them in gently.

Pour the batter into the prepared loaf pan and smooth the top with a spatula.

Bake in the preheated oven for 60-65 minutes or until a toothpick inserted into the center comes out clean.

Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Make the rebel float frosting: In a chilled bowl, use an electric mixer to whip the heavy cream until soft peaks form. Gradually add the powdered sugar and vanilla extract, whipping until you reach stiff peaks.

Fold in the crushed ice cream sandwiches gently, ensuring an even distribution throughout the frosting.

Once the banana bread is completely cool, generously spread the rebel float frosting on top.

Finish off with colorful sprinkles for an extra touch of magic!

Slice and serve your delicious Rebel Float Frosted Banana Bread as a fun dessert or sweet treat!
