- 1 egg (or 1 tablespoon aquafaba for vegan option)

- 1 tablespoon water

1. Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    2. Mix Dry Ingredients: In a large mixing bowl, combine the almond flour, vital wheat gluten, baking powder, and salt. Whisk well until evenly distributed.

      3. Combine Wet Ingredients: In another bowl, mix the Greek yogurt, vanilla extract, and rainbow sprinkles until combined.

        4. Combine Both Mixtures: Gradually add the wet mixture to the dry ingredients. Using a spatula, gently fold until a dough forms. If it feels too sticky, sprinkle a little extra almond flour.

          5. Shape the Bagels: Divide the dough into 4 equal portions. Roll each portion into a ball, then use your finger to poke a hole in the center, creating the bagel shape. Gently stretch to ensure the hole is big enough, as it will shrink while baking.

            6. Prepare the Egg Wash: In a small bowl, whisk the egg (or aquafaba) with water. Brush the tops of each bagel with the egg wash for a shiny finish.

              7. Add Toppings: If desired, sprinkle extra rainbow sprinkles or seeds over the top of each bagel.

                8. Bake: Place the bagels on the prepared baking sheet and bake in the preheated oven for 20 minutes, or until golden brown.

                  9. Cool and Serve: Remove the bagels from the oven and let them cool for a few minutes on a wire rack. Serve warm or at room temperature, sliced like regular bagels.
