Quinoa Rainbow Veggie Bowl with Citrus Dressing

This quinoa rainbow veggie bowl with citrus dressing is a simple dinner recipe made with everyday ingredients. Perfect for busy days and family meals.

1 cup quinoa, rinsed

2 cups vegetable broth or water

1 cup cherry tomatoes, halved

1 cup bell peppers (red, yellow, green), diced

1 cup cucumber, diced

1 cup corn kernels (fresh or frozen)

1 cup black beans, drained and rinsed

1 avocado, diced

1/4 cup red onion, thinly sliced

1/4 cup fresh cilantro, chopped

Salt and pepper to taste

Citrus Dressing:

1/4 cup olive oil

Juice of 1 lime

Juice of 1 orange

1 tablespoon honey or agave syrup (adjust for sweetness)

1 teaspoon Dijon mustard

Salt and pepper to taste

Cook Quinoa: In a medium saucepan, combine the quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes, or until the quinoa is fluffy and the liquid is absorbed. Remove from heat and let it sit for 5 minutes before fluffing with a fork.

    Prep Veggies: While quinoa is cooking, prepare your vegetables. Chop the cherry tomatoes, bell peppers, cucumber, and avocado. Drain and rinse the black beans.

      Make Dressing: In a small bowl, whisk together olive oil, lime juice, orange juice, honey (or agave), Dijon mustard, and a pinch of salt and pepper. Taste and adjust seasoning as needed.

        Assemble the Bowl: In a large bowl, combine the cooked quinoa, tomatoes, bell peppers, cucumber, corn, black beans, avocado, red onion, and cilantro.

          Dress It Up: Drizzle the citrus dressing over the quinoa and veggie mixture. Gently toss to combine, ensuring everything is evenly coated.
