Ingredients

1 cup pumpkin puree (canned or freshly made)

1 cup milk (whole or 2%)

1/2 cup unsalted butter, melted

1 cup granulated sugar

3 large eggs

1 teaspoon vanilla extract

1 cup all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon salt

1 teaspoon pumpkin pie spice (or a blend of cinnamon, nutmeg, and ginger)

Powdered sugar for dusting (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x9 inch (23x23 cm) baking dish or pan.

Mix Wet Ingredients: In a large mixing bowl, combine the pumpkin puree, milk, melted butter, sugar, eggs, and vanilla extract. Whisk until smooth and well combined.

Combine Dry Ingredients: In a separate bowl, sift together the flour, baking powder, salt, and pumpkin pie spice. Gradually add this mixture to the wet ingredients, stirring gently until just combined. Be careful not to overmix.

Layering for Magic: Pour the batter into the prepared baking dish. The batter will seem thin, but that’s part of the magic!

Bake: Bake in the preheated oven for about 40-45 minutes or until the top of the cake is golden brown, and a toothpick inserted into the center comes out with some moist crumbs (don't worry if it looks a bit jiggly).

Cool Down: Remove the cake from the oven and let it cool to room temperature, then refrigerate for at least 2 hours before serving to help it set properly.

Serve: Once chilled, dust the top with powdered sugar if desired. Cut into squares and enjoy the magical layers of custard and cake!
