1 cup pure pumpkin puree (canned or fresh)

1/2 cup vegetable oil or melted coconut oil

1 cup brown sugar, packed

1/2 cup granulated sugar

3 large eggs

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon ground ginger

1/2 teaspoon salt

1/2 cup chopped walnuts or pecans (optional)

1/2 cup chocolate chips (optional)

Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan or line it with parchment paper for easy removal.

    In a large mixing bowl, combine the pumpkin puree, vegetable oil, brown sugar, granulated sugar, eggs, and vanilla extract. Whisk together until smooth and well combined.

      In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.

        Gradually add the dry ingredients to the wet mixture, folding gently with a spatula until just combined. Be careful not to over-mix. If you'd like to add nuts or chocolate chips, fold them in at this point.

          Pour the batter into the prepared loaf pan, smoothing the top with a spatula.

            Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean. The top should be golden brown and slightly crackled.

              Once baked, remove the pumpkin bread from the oven and let it cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely.
