Ingredients
  

  • 2 cups fresh prickly pear juice strain from blended prickly pears
  • 1 cup fresh lemon juice about 4-5 lemons
  • 1 cup granulated sugar adjust based on sweetness preference
  • 4 cups cold water
  • 1/2 teaspoon sea salt to enhance flavor
  • 1 tablespoon fresh mint leaves for garnish
  • 1 cup ice cubes for serving
  • 1 teaspoon lime zest for added flavor
  • 2 slices lime for garnish

Instructions
 

  • Begin by cutting the prickly pears in half and scooping out the flesh with a spoon. Blend the flesh until smooth, then strain through a fine mesh sieve to extract 2 cups of prickly pear juice.
  • In a large pitcher, combine the fresh lemon juice, granulated sugar, and sea salt. Stir until the sugar is fully dissolved.
  • Add the cold water and the strained prickly pear juice to the pitcher. Mix well to combine all the ingredients thoroughly.
  • Taste the lemonade and adjust the sweetness if necessary by adding more sugar or lemon juice as desired.
  • Chill the lemonade in the refrigerator for at least 20 minutes before serving to ensure it is refreshing and cold.
  • Serve the prickly pear lemonade over ice cubes in glasses. Garnish each glass with a sprig of mint, a slice of lime, and a sprinkle of lime zest.
