1 cup shelled pistachios, finely ground

1 cup all-purpose flour

1 tsp baking powder

½ tsp baking soda

¼ tsp salt

½ cup unsalted butter, softened

1 cup granulated sugar

3 large eggs

1 tsp vanilla extract

½ cup sour cream

1 cup crushed pineapple, drained

½ cup diced pineapple for garnish

    Prepare Dry Ingredients: In a medium bowl, whisk together the finely ground pistachios, flour, baking powder, baking soda, and salt until well combined. Set aside.

      Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and granulated sugar together with an electric mixer until light and fluffy, about 3-4 minutes.

        Add Eggs and Flavor: Add the eggs, one at a time, to the butter and sugar mixture, beating well after each addition. Stir in the vanilla extract.
