Pineapple Lemon Drop

Ingredients
  

- 1 cup fresh pineapple juice

- ½ cup freshly squeezed lemon juice (about 3-4 lemons)

- ¼ cup simple syrup (see notes for homemade)

- 1 cup sparkling water (chilled)

- Ice cubes

- Lemon slices, for garnish

- Pineapple wedges, for garnish

- Fresh mint leaves, for garnish

Instructions
 

1. Prepare Your Glasses: Chill your serving glasses in the freezer for about 5 minutes or fill them with ice water while you prepare the drink.

    2. Mix the Juices: In a large mixing pitcher, combine the fresh pineapple juice and the freshly squeezed lemon juice. Stir well to combine.

      3. Add the Syrup: Gently add the simple syrup to the juice mixture, adjusting the sweetness to your taste. Stir again until fully mixed.

        4. Pour Over Ice: Remove the ice water from the glasses (if used) and fill each glass halfway with ice cubes.

          5. Combine with Sparkling Water: Pour the juice mixture over the ice until the glass is filled to about ¾ full. Top each glass with the chilled sparkling water and stir gently to mix.

            6. Garnish and Serve: Garnish with a slice of lemon, a wedge of pineapple, and a sprig of fresh mint. Serve immediately and enjoy!

              Notes

              - Simple Syrup: To make simple syrup, combine equal parts of sugar and water in a saucepan. Heat over medium heat until the sugar dissolves. Allow to cool before using. Store leftovers in the refrigerator for up to a month.
              - Sweetness Adjustment: Feel free to adjust the sweetness by adding more or less simple syrup based on your personal preference.
              - Alcohol Variation: For an adult version, consider adding vodka or rum to taste.
