1 lb chicken breast, diced

1 cup fresh pineapple, diced

1 red bell pepper, thinly sliced

1 small red onion, finely chopped

2 cloves garlic, minced

1 tsp ground cumin

1 tsp chili powder

1 tbsp olive oil

Salt and pepper to taste

8 small corn or flour tortillas

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Prepare the Chicken: In a medium bowl, combine the diced chicken, lime juice, cumin, chili powder, salt, and pepper. Toss until well coated, then let it marinate for about 15 minutes.

    Cook the Chicken: Heat olive oil in a skillet over medium heat. Add the marinated chicken and cook for about 5-7 minutes or until the chicken is fully cooked and golden brown.

      Add Vegetables: Stir in the chopped onion, garlic, and red bell pepper. Sauté for another 3-4 minutes until the vegetables are tender.

        Incorporate Pineapple: Add the diced pineapple to the skillet, and cook for an additional 2 minutes, allowing the pineapple to caramelize slightly and become fragrant.

          Warm the Tortillas: In a separate pan, warm the tortillas over low heat for about 30 seconds on each side until pliable.
