Ingredients

2 cups all-purpose flour

1/2 teaspoon instant yeast

3/4 teaspoon salt

3/4 cup warm water (about 110°F)

1 tablespoon olive oil

1 cup canned San Marzano tomatoes, crushed

1 tablespoon fresh basil, chopped (plus extra for topping)

1 teaspoon olive oil for sauce

1 teaspoon sea salt for sauce

8 ounces fresh mozzarella cheese, sliced

Freshly cracked black pepper, to taste

Instructions

Prepare the Dough:

    - In a large mixing bowl, combine the flour, instant yeast, and salt.

      - Slowly add the warm water while mixing, until a shaggy dough forms.

        - Add 1 tablespoon of olive oil and knead on a floured surface for about 5–7 minutes or until the dough is smooth and elastic.

          - Place the dough in a lightly oiled bowl, cover it with a damp cloth or plastic wrap, and let it rise in a warm place for about 1–2 hours, or until doubled in size.

            Make the Sauce:

              - In a bowl, combine the crushed San Marzano tomatoes, chopped basil, 1 teaspoon olive oil, and sea salt. Mix well and set aside to let the flavors meld.

                Preheat the Oven:

                  - Preheat your oven to the highest temperature (usually around 475°F to 500°F) and if you have a pizza stone, place it in the oven to heat up.

                    Assemble the Pizza:

                      - Once the dough has risen, punch it down and transfer it to a floured surface. Roll it out into a 12-inch circle, about 1/4-inch thick.

                        - Carefully transfer the rolled dough onto a piece of parchment paper for easy handling.

                          - Spread a thin layer of the prepared tomato sauce over the dough, leaving a small border for the crust.

                            - Distribute the sliced mozzarella evenly over the sauce and add a sprinkle of black pepper and additional basil leaves on top.

                              Bake the Pizza:

                                - If using a pizza stone, carefully slide the parchment with the pizza onto the preheated stone. If not, transfer the pizza (with parchment) onto a baking sheet.

                                  - Bake for 10-12 minutes, or until the crust is golden and the cheese is bubbling and slightly browned.

                                    Serve:

                                      - Remove the pizza from the oven, drizzle with a touch of olive oil, and add more fresh basil on top. Allow it to cool for a minute, then slice and serve hot.
