Peach Glazed Pork Chops: A Summer Delight

4 boneless pork chops (1-inch thick)

Salt and pepper, to taste

1 tablespoon olive oil

1 ripe peach, pitted and diced

1/4 cup peach preserves

2 tablespoons balsamic vinegar

1 teaspoon Dijon mustard

1/2 teaspoon garlic powder

1/2 teaspoon fresh thyme leaves (or 1/4 teaspoon dried thyme)

Fresh parsley, for garnish

Instructions
 

Prepare the Pork Chops: Season both sides of the pork chops generously with salt and pepper.

    Sear the Chops: In a large skillet, heat olive oil over medium-high heat. Add the pork chops and sear for about 4-5 minutes on each side or until they are golden brown and cooked through. Remove from the skillet and keep warm.

      Make the Peach Glaze: In the same skillet, lower the heat to medium and add diced peach, cooking for about 2 minutes until softened. Stir in the peach preserves, balsamic vinegar, Dijon mustard, garlic powder, and thyme. Cook for another minute, stirring occasionally until the glaze is well combined and slightly thickened.

        Glaze the Chops: Return the pork chops to the skillet and coat them in the peach glaze, cooking for an additional 2 minutes to heat through and absorb flavors.

          Serve: Plate the pork chops and drizzle extra glaze over them. Garnish with fresh parsley and any additional peach slices if desired.
