24 Oreo cookies (plus 4 crushed for topping)

½ cup unsalted butter, melted

16 oz cream cheese, softened

1 cup granulated sugar

1 cup sour cream

1 tsp vanilla extract

3 large eggs

¼ cup all-purpose flour

Prepare the Crust: Preheat your oven to 325°F (160°C). In a food processor, crush the 24 Oreo cookies into fine crumbs. In a mixing bowl, combine the cookie crumbs with the melted butter. Mix until the crumbs are well-coated.

    Press Crust into Pan: Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake for 10 minutes, then remove from oven and let it cool slightly.

      Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with a hand mixer or stand mixer until smooth and creamy. Gradually add in the granulated sugar, and beat until well combined.

        Add the Sour Cream and Vanilla: Mix in the sour cream and vanilla extract until fully incorporated. Make sure to scrape the sides of the bowl to get all the ingredients mixed well.

          Incorporate the Eggs: Add the eggs, one at a time, beating gently after each addition until just blended. Be careful not to overmix.

            Fold in Flour and Oreos: Sift in the flour and gently fold it into the cheesecake batter. Finally, fold in the remaining crushed Oreos to add texture to the filling.

              Pour Filling into Crust: Pour the cheesecake batter over the cooled crust, smoothing the top with a spatula.

                Bake the Cheesecake: Bake the cheesecake in the preheated oven for about 50-60 minutes or until the edges are set, but the center still has a slight jiggle.

                  Cool and Chill: Turn off the oven, crack the door open, and let the cheesecake cool in the oven for about an hour. This helps prevent cracking. After, transfer to the refrigerator and chill for at least 4 hours, preferably overnight.
