1 cup semi-sweet chocolate chips

8 oz cream cheese, softened

½ cup granulated sugar

1 large egg

1 teaspoon vanilla extract

8 crushed Oreo cookies (plus extra for topping)

For Assembly:

12 whole Oreo cookies (for the bottom layer)

Whipped cream (optional, for serving)

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a standard muffin tin with cupcake liners.

    Prepare the Brownie Batter: In a medium microwave-safe bowl, combine the semi-sweet chocolate chips and unsalted butter. Microwave in 20-second intervals, stirring in between, until melted and smooth.

      Mix the Brownie Ingredients: Whisk in the granulated sugar until well combined. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.

        Incorporate Dry Ingredients: Sift together the flour, cocoa powder, and salt in a separate bowl. Gradually fold the dry mixture into the chocolate mixture until just combined. Set aside.

          Prepare the Cheesecake Batter: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Add the granulated sugar, egg, and vanilla extract. Mix until well combined. Gently fold in the crushed Oreo cookies.

            Assemble the Cookie Cups:

              - Place one whole Oreo cookie at the bottom of each prepared muffin liner.

                - Spoon brownie batter on top of the Oreo, filling each liner about halfway.

                  - Add a layer of the cheesecake mixture on top, filling the liners almost to the top.

                    Bake: Bake in the preheated oven for 18-20 minutes or until the tops are set, and a toothpick inserted into the brownie layer comes out with a few crumbs.

                      Cool: Remove from the oven and let the brownie cookie cups cool in the muffin tin for about 10 minutes. Then, carefully transfer them to a wire rack to cool completely.
