Ingredients
  

2 salmon fillets (about 6 oz each)

1 cup orzo pasta

2 cups vegetable or chicken broth

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 lemon (zest and juice)

1 cup spinach, chopped

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley for garnish

Optional: Red pepper flakes for a kick

Heat the Skillet: In a large skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the salmon fillets skin-side down, seasoning them with salt and pepper. Sear for about 4-5 minutes until the skin is crispy. Flip and cook for another 3-4 minutes until cooked to your liking. Remove salmon and set aside.

    Sauté Aromatics: In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onion and sauté until translucent, about 3-4 minutes. Then, add the minced garlic and sauté for another minute until fragrant.

      Add Orzo and Broth: Stir in the orzo, making sure it's evenly coated with the onion and garlic. Pour in the vegetable or chicken broth and bring to a gentle boil. Reduce heat to a simmer, cover, and cook for about 10-12 minutes, or until the orzo is al dente and the liquid is absorbed.

        Incorporate Vegetables: Once the orzo is cooked, stir in the cherry tomatoes, chopped spinach, lemon juice, and lemon zest. Allow to heat through for about 2 minutes, mixing well to combine all ingredients.

          Combine Salmon and Orzo: Gently place the seared salmon fillets back into the skillet on top of the orzo mixture. Let them warm through for an additional 2-3 minutes.

            Garnish and Serve: Remove from heat and sprinkle with fresh parsley. If desired, add red pepper flakes for an extra kick. Serve warm straight from the skillet.
