1 lb large shrimp, peeled and deveined

1 cup orzo pasta

2 tablespoons olive oil

3 cloves garlic, minced

1 small onion, finely chopped

1 can (14.5 oz) diced tomatoes (with juice)

4 cups low-sodium chicken broth

1 teaspoon red pepper flakes (adjust to taste)

1 teaspoon dried oregano

Salt and pepper to taste

2 cups fresh spinach

1/2 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.

    Add the minced garlic to the pot and cook for an additional 1-2 minutes until fragrant, being careful not to burn it.

      Stir in the diced tomatoes (with juices), chicken broth, red pepper flakes, oregano, salt, and pepper. Bring to a gentle boil.

        Once boiling, add the orzo pasta. Stir well and reduce the heat to medium-low. Cover and simmer for about 10-12 minutes, stirring occasionally, until the pasta is al dente and most of the liquid is absorbed.

          Gently fold in the shrimp and fresh spinach. Cover and cook for an additional 3-4 minutes, or until the shrimp turns pink and is cooked through, and the spinach wilts.

            Remove from heat and stir in the grated Parmesan cheese until well combined.

              Taste and adjust the seasoning if necessary. Serve hot, garnished with fresh parsley and lemon wedges on the side.
