One-Pan Honey Garlic Chicken & Veggies – Easy Weeknight Meal

This one-pan honey garlic chicken & veggies – easy weeknight meal is a simple dinner recipe made with everyday ingredients. Perfect for busy days and family meals.

Ingredients
  

4 boneless, skinless chicken thighs

1 cup broccoli florets

1 cup bell peppers (red, yellow, or green), sliced

1 cup snap peas

4 cloves garlic, minced

1/4 cup honey

1/4 cup soy sauce

2 tablespoons olive oil

1 tablespoon apple cider vinegar

1 teaspoon fresh ginger, grated

1 teaspoon sesame oil

Salt and pepper, to taste

Sesame seeds, for garnish

Green onions, for garnish

Instructions
 

Prep the Chicken: Start by seasoning the chicken thighs with salt and pepper on both sides. Set aside.

    Make the Sauce: In a small bowl, whisk together honey, soy sauce, apple cider vinegar, minced garlic, grated ginger, and sesame oil until well combined.

      Heat the Pan: In a large skillet or frying pan, heat olive oil over medium-high heat.

        Sear the Chicken: Place the seasoned chicken thighs in the pan and sear for about 4-5 minutes on each side until golden brown and cooked through. Remove the chicken from the pan and set aside.

          Cook the Veggies: In the same pan, add the broccoli, bell peppers, and snap peas. Stir-fry for about 3-4 minutes, or until they start to soften.

            Combine Chicken and Sauce: Return the chicken to the pan and pour the honey garlic sauce over everything. Toss to coat the chicken and veggies evenly.

              Simmer: Reduce the heat to low and let it simmer for another 3-5 minutes, allowing the sauce to thicken slightly and coat the chicken and veggies.

                Garnish and Serve: Remove from heat and garnish with sesame seeds and chopped green onions. Serve warm, either on its own or over a bed of rice or quinoa.
