Ingredients
  

  • 4 bone-in chicken thighs chicken thighs skin-on for extra flavor
  • 2 large yellow onions thinly sliced
  • 1 tablespoon fresh thyme chopped
  • 3 cloves garlic minced
  • 1 cup beef broth low sodium
  • 1 cup Gruyère cheese shredded
  • 2 tablespoons olive oil for sautéing
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt to taste
  • 1 teaspoon balsamic vinegar for added depth

Instructions
 

  • Heat the olive oil in a large skillet over medium heat. Season the chicken thighs with salt and pepper, then add them skin-side down to the hot pan. Sear for about 5-7 minutes until the skin is golden brown, then flip and cook for an additional 5 minutes. Remove and set aside.
  • In the same pan, add the sliced onions and cook over medium heat, stirring occasionally, for about 10-12 minutes until they are caramelized and golden brown. Add the minced garlic and fresh thyme, cooking for an additional minute until fragrant.
  • Pour in the beef broth and balsamic vinegar, scraping the bottom of the pan to deglaze. Bring the mixture to a simmer, then return the chicken thighs to the pan, skin-side up. Cover and cook for 10 minutes until the chicken is cooked through.
  • Sprinkle the shredded Gruyère cheese on top of the chicken, cover, and cook for an additional 2-3 minutes until the cheese is melted and bubbly. Serve hot, garnished with extra thyme if desired.
