Ingredients
  

  • 2 cups heavy cream preferably organic for best flavor
  • 1 cup whole milk full-fat for creaminess
  • 1/2 cup raw honey for natural sweetness
  • 1 tablespoon vanilla extract pure vanilla for flavor
  • 1/4 teaspoon sea salt to enhance sweetness
  • 2 large egg yolks for richness and creaminess
  • 1/4 teaspoon cinnamon optional, for added warmth
  • 1 tablespoon lemon juice to balance sweetness
  • crushed nuts or chocolate chips optional, for mix-ins

Instructions
 

  • In a medium saucepan, combine the heavy cream, whole milk, and raw honey. Heat over medium heat until warm, stirring occasionally until the honey dissolves completely. Do not let it boil.
  • In a separate bowl, whisk together the egg yolks and sea salt until pale and slightly thickened. Slowly pour the warm cream mixture into the egg mixture, whisking constantly to temper the eggs.
  • Return the mixture to the saucepan and cook over low heat, stirring constantly until the mixture thickens enough to coat the back of a spoon, about 10-12 minutes. Remove from heat.
  • Stir in the vanilla extract, lemon juice, and cinnamon (if using). Allow the mixture to cool to room temperature, then refrigerate until completely chilled, about 2 hours.
  • Once chilled, churn the mixture in an ice cream maker according to the manufacturer’s instructions until it reaches a soft-serve consistency.
  • Transfer the ice cream to an airtight container. If desired, fold in crushed nuts or chocolate chips at this stage.
  • Freeze the ice cream for at least 4 hours or until firm before serving. Scoop and enjoy!
