Ingredients
  

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

2 tablespoons sugar

16 oz cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

1 ½ cups fresh mixed berries (strawberries, blueberries, raspberries)

2 medium peaches, diced

¼ cup berry or peach jam (for glaze)

Fresh mint leaves (for garnish, optional)

Instructions
 

Prepare the Crust: In a large mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even crust. Place in the refrigerator to set while preparing the filling.

    Make the Cheesecake Filling: In another mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add in the powdered sugar and vanilla extract, mixing until fully incorporated.

      Whip the Cream: In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture, being careful not to deflate the whipped cream.

        Add Fruits: Gently fold in the fresh mixed berries and diced peaches into the cheesecake filling. Reserve a few berries and peach pieces for garnishing later.

          Assemble the Cheesecake: Spoon the cheesecake filling over the prepared graham cracker crust, smoothing the top with a spatula. Cover the cheesecake with plastic wrap and refrigerate for at least 4 hours or overnight to allow it to set properly.

            Prepare the Glaze: If using, gently heat the berry or peach jam in a small saucepan until it becomes liquid. Remove from heat and let cool slightly.
