1 ½ cups graham cracker crumbs

½ cup unsweetened coconut flakes

½ cup unsalted butter, melted

2 cups cream cheese, softened

1 cup powdered sugar

1 cup heavy whipping cream

1 cup orange juice (freshly squeezed preferred)

Zest of 1 large orange

1 teaspoon vanilla extract

1 teaspoon unflavored gelatin (optional for stability)

Orange slices and whipped cream for garnish

Instructions
 

In a mixing bowl, combine the graham cracker crumbs and coconut flakes with melted butter until the mixture resembles wet sand. Press this mixture firmly into the bottom of a 9-inch springform pan to form an even crust. Place in the refrigerator to chill while preparing the filling.

    In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Add the powdered sugar, vanilla extract, orange zest, and orange juice. Mix until fully combined.

      In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until no streaks remain. If using gelatin for stability, dissolve it in 2 tablespoons of warm water and fold it in at this stage, ensuring it is well incorporated.

        Pour the creamy filling over the chilled crust, smoothing the top with a spatula. Cover the cheesecake with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to set.

          Once set, carefully remove the cheesecake from the springform pan. Garnish the top with fresh orange slices and dollops of whipped cream.
