1 cup raw cashews (soaked for 4 hours and drained)

1 cup rolled oats

1 scoop vanilla whey protein powder (or plant-based alternative)

1/2 cup fresh blueberries (plus extra for garnish)

1/4 cup Greek yogurt (or dairy-free yogurt)

1/4 cup honey or maple syrup

1 tsp vanilla extract

1/2 tsp lemon juice

Pinch of salt

1/4 cup shredded coconut (optional, for rolling)

Instructions
 

In a food processor, combine the soaked cashews, rolled oats, protein powder, Greek yogurt, honey, vanilla extract, lemon juice, and salt. Process until smooth and creamy, scraping down the sides as needed.

    Gently fold in the fresh blueberries, being careful not to break them too much; you want to keep some of them whole for texture.

      Once the mixture is well combined, use your hands to form small bite-sized balls (about 1 inch in diameter). If the mixture is too sticky, you can wet your hands slightly to make rolling easier.

        If desired, roll the bites in shredded coconut for added texture and flavor.

          Place the protein bites on a parchment-lined tray or plate and refrigerate for at least 30 minutes to firm up.

            After chilling, garnish with additional fresh blueberries on top if desired, and serve chilled straight from the fridge.
