Ingredients
  

1 lb (450g) ground beef or turkey

1 medium onion, finely chopped

2 cloves garlic, minced

1 bell pepper, diced (any color)

1 cup (150g) frozen mixed vegetables (peas, carrots, corn)

1 can (14 oz) diced tomatoes, undrained

1 can (15 oz) kidney beans, rinsed and drained

2 tbsp tomato paste

1 tsp cumin

1 tsp paprika

1 tsp dried oregano

Salt and pepper, to taste

1 cup (240ml) beef or vegetable broth

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Brown the Meat: In a skillet over medium heat, add the ground meat and cook until browned, breaking it apart with a wooden spoon. Drain excess fat if necessary.

    Prepare the Base: In your crockpot, combine the browned meat with chopped onion, minced garlic, and diced bell pepper. Stir to mix well.

      Add Veggies and Beans: Add the frozen mixed vegetables, diced tomatoes (with juices), and kidney beans to the crockpot. Mix everything together.

        Season: Stir in the tomato paste, cumin, paprika, dried oregano, salt, and pepper.

          Add Broth: Pour in the beef or vegetable broth and give everything a good stir to combine.

            Cook: Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until everything is tender and flavors meld together.

              Serve: Taste and adjust seasoning if necessary. Serve hot, garnished with fresh cilantro or parsley if desired.
