Mexican Street Corn Salad

Ingredients
  

4 ears of fresh corn (or 2 cans of sweet corn, drained)

1/2 cup mayonnaise

1/2 cup sour cream

1 cup crumbled Cotija cheese (plus more for garnish)

1/4 cup fresh cilantro, chopped

1 lime, juiced

1 teaspoon chili powder

1/2 teaspoon smoked paprika

1/4 teaspoon garlic powder

Salt and pepper to taste

Optional: diced jalapeƱos for heat

Instructions
 

Prepare the Corn: If using fresh corn, grill or boil the corn on the cob until tender. Once cooled, carefully cut the kernels off the cob. If using canned corn, simply drain and rinse the corn.

    Make the Dressing: In a large mixing bowl, combine the mayonnaise, sour cream, crumbled Cotija cheese, lime juice, chili powder, smoked paprika, garlic powder, salt, and pepper. Mix well until everything is blended smoothly.

      Combine Ingredients: Add the corn kernels to the dressing mixture. Stir in chopped cilantro and, if desired, diced jalapeƱos for extra heat.

        Taste and Adjust: Taste the salad and adjust seasoning as needed. You can add more lime juice, salt, or even more chili powder to suit your taste.

          Serve: Transfer the salad to a serving bowl and garnish with extra Cotija cheese, a sprinkle of chili powder, and more chopped cilantro if desired.

            Chill (Optional): This salad can be served immediately or chilled in the refrigerator for 30 minutes to allow the flavors to meld.
