1 large eggplant, diced

2 medium zucchinis, sliced

1 red bell pepper, chopped

1 yellow bell pepper, chopped

1 cup cherry tomatoes, halved

1 red onion, cut into wedges

4 cloves garlic, minced

4 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper, to taste

Fresh basil, for garnish

Instructions
 

Preheat your oven to 425°F (220°C).

    In a large bowl, combine the diced eggplant, sliced zucchinis, chopped red and yellow bell peppers, halved cherry tomatoes, and red onion.

      Add the minced garlic, olive oil, dried oregano, dried thyme, smoked paprika, salt, and pepper to the vegetables and toss well until they’re evenly coated.

        Spread the vegetable mixture in a single layer on a large baking sheet.

          Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and lightly browned, stirring halfway through roasting.

            Remove from the oven and let it cool slightly before transferring to a serving dish.

              Garnish with fresh basil leaves before serving. Enjoy your Mediterranean roasted vegetables warm as a side dish or over quinoa for a delightful main course!
