Ingredients
  

1 cup orzo pasta

1 1/2 cups cherry tomatoes, halved

1 cucumber, diced

1/2 red onion, finely chopped

1/2 cup Kalamata olives, pitted and halved

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup fresh basil, chopped

1/3 cup extra virgin olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and pepper to taste

1 lemon, zested and juiced

Instructions
 

Cook the Orzo: Bring a large pot of salted water to a boil. Add the orzo pasta and cook according to package instructions until al dente, usually about 8-10 minutes. Drain and rinse under cold water to stop the cooking process. Set aside in a large mixing bowl.

    Prepare the Veggies: While the orzo cooks, prepare the vegetables. In a mixing bowl, combine the halved cherry tomatoes, diced cucumber, finely chopped red onion, and Kalamata olives.

      Mix the Dressing: In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, dried oregano, lemon zest, and lemon juice. Season with salt and pepper to taste.

        Combine Ingredients: Add the vegetable mixture to the bowl with the cooled orzo pasta. Gently fold in the crumbled feta cheese, chopped parsley, and basil.

          Dress the Salad: Pour the dressing over the salad mixture and toss everything gently until well combined. Adjust seasoning with more salt, pepper, or lemon juice as needed.

            Chill and Serve: For best flavor, cover the salad with plastic wrap and refrigerate for at least 30 minutes before serving. Serve chilled or at room temperature.
