Mediterranean Baked Feta Eggs: A Savory Delight for Any Meal

200g feta cheese, crumbled

4 large eggs

1 cup cherry tomatoes, halved

1 red bell pepper, diced

1 small red onion, finely chopped

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

1 tablespoon olive oil

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Crusty bread (for serving)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a medium-sized ovenproof dish, drizzle the olive oil and spread the chopped red onion and minced garlic evenly across the bottom.

      Add the cherry tomatoes and diced red bell pepper to the dish, seasoning them with salt, pepper, oregano, and thyme. Mix everything thoroughly.

        Crumble the feta cheese over the vegetable mixture, distributing it evenly.

          Create four little wells in the feta and vegetable mixture using a spoon. Crack an egg into each well gently, ensuring the yolk stays intact.

            Season the eggs with a touch of salt and pepper.

              Bake in the preheated oven for about 20-25 minutes, or until the egg whites are set but the yolks still have a soft, runny consistency – adjust baking time for desired yolk texture.

                Once done, remove from the oven and garnish with fresh parsley.

                  Serve hot, accompanied by slices of crusty bread to soak up the delicious juices.
