Ingredients
  

  • 1 pound chicken breasts cut into bite-sized pieces
  • 2 cups penne pasta uncooked
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes chopped
  • 1 cup chicken broth
  • 1 tablespoon Italian seasoning
  • 3 cloves garlic minced
  • 2 tablespoons olive oil for cooking
  • 1/2 cup parmesan cheese grated
  • 1/4 cup fresh basil chopped for garnish
  • salt and pepper to taste

Instructions
 

  • In a large skillet, heat olive oil over medium-high heat. Add the chicken pieces, season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes. Remove the chicken and set aside.
  • In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Then, add the sun-dried tomatoes and Italian seasoning, cooking for an additional 2 minutes.
  • Pour in the chicken broth and heavy cream, stirring to combine. Bring the mixture to a simmer, then add the uncooked penne pasta. Stir well and cover the skillet, cooking for 10-12 minutes until the pasta is al dente.
  • Once the pasta is cooked, add the cooked chicken back into the skillet and stir in the grated parmesan cheese, mixing until the sauce is creamy and the cheese is melted. Adjust seasoning with salt and pepper as needed.
  • Serve the pasta hot, garnished with chopped fresh basil for an aromatic finish.
