Ingredients

1 1/2 cups all-purpose flour

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

Zest of 1 lime

1/2 cup buttermilk

1/4 cup freshly squeezed lime juice

1 tablespoon tequila (optional)

Pinch of coarse salt for garnish

For the Margarita Frosting:

1/2 cup unsalted butter, softened

4 cups powdered sugar

2-3 tablespoons freshly squeezed lime juice

1 tablespoon tequila (optional)

Zest of 1 lime

Lime wedges and coarse salt for garnish

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a standard cupcake pan with cupcake liners.

Combine Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

Cream Butter and Sugar: In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3-5 minutes.

Add Eggs and Flavorings: Beat in the eggs, one at a time. Mix in the vanilla extract and lime zest until well combined.

Incorporate Wet Ingredients: In a separate bowl, mix together the buttermilk, lime juice, and tequila (if using). Gradually add this mixture to the butter mixture, alternating with the flour mixture, starting and ending with the flour. Mix until just combined.

Fill Cupcake Liners: Divide the batter evenly among the prepared cupcake liners, filling each about 2/3 full.

Bake: Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Prepare Frosting: In a large bowl, beat together the softened butter and half of the powdered sugar until smooth. Add the lime juice, tequila (if using), and lime zest, then gradually mix in the remaining powdered sugar until the desired consistency is reached.

Frost the Cupcakes: Once the cupcakes are completely cooled, frost them with the Margarita frosting using a piping bag or spatula.

Garnish and Serve: Sprinkle a pinch of coarse salt on each cupcake, and add a lime wedge on top as a garnish if desired. Enjoy your Margarita Cupcakes with a refreshing twist!
