For the Cake:

1 ½ cups all-purpose flour

1 tsp baking powder

½ tsp baking soda

¼ tsp salt

½ cup unsalted butter, softened

1 cup granulated sugar

3 large eggs

1 tsp vanilla extract

½ cup whole milk

½ cup mango puree (fresh or canned)

For the Milk Soak:

1 cup evaporated milk

1 cup sweetened condensed milk

1 cup whole milk

½ cup mango puree

For the Topping:

1 cup heavy cream

2 tbsp powdered sugar

1 tsp vanilla extract

Fresh mango slices, for garnish

Mint leaves, for garnish

Instructions

Prepare the Cake:

    - Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking dish.

      - In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

        - In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

          - Beat in the eggs one at a time, then add the vanilla extract, mango puree, and milk. Mix until smooth.

            - Gradually add the dry ingredients and mix until just combined, being careful not to overmix.

              - Pour the batter into the prepared baking dish and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

                Prepare the Milk Soak:

                  - While the cake is baking, combine the evaporated milk, sweetened condensed milk, whole milk, and mango puree in a bowl. Whisk until well blended.

                    Assemble the Cake:

                      - Once the cake is done baking, remove it from the oven and allow it to cool in the pan for 10 minutes.

                        - After cooling, poke several holes in the cake using a fork or toothpick.

                          - Slowly pour the milk soak mixture over the cake, ensuring it is evenly soaked. Let it absorb the mixture for at least 1 hour in the refrigerator.

                            Prepare the Topping:

                              - In a large mixing bowl, whip the heavy cream until soft peaks form. Add the powdered sugar and vanilla extract, and continue whipping until stiff peaks form.

                                - Spread the whipped cream over the top of the soaked cake evenly.

                                  Garnish and Serve:

                                    - Decorate the top with fresh mango slices and mint leaves for a pop of color.

                                      - Slice and serve chilled. Enjoy your unique Mango Lassi Tres Leches Cake!
