4 medium russet potatoes, scrubbed and diced

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 lb ground beef or turkey

1 packet taco seasoning (about 1 oz)

1 cup black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 cup cherry tomatoes, halved

1 cup shredded cheese (cheddar or Mexican blend)

1 avocado, diced

1/2 cup sour cream or Greek yogurt

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Prepare the Potatoes: Preheat your oven to 425°F (220°C). In a large bowl, combine the diced potatoes with olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper. Toss until evenly coated.

    Roast the Potatoes: Spread the seasoned potatoes in a single layer on a baking sheet. Roast in the preheated oven for 25-30 minutes, or until golden brown and crispy, stirring halfway through.

      Cook the Meat: While the potatoes are roasting, heat a large skillet over medium-high heat. Add the ground beef or turkey and cook until browned, breaking it apart as it cooks. Drain any excess fat if necessary. Stir in the taco seasoning along with a splash of water (about 1/4 cup). Reduce the heat to low and let simmer for 5 minutes.

        Prepare Other Ingredients: In a separate bowl, mix together the black beans, corn, and halved cherry tomatoes. If desired, season lightly with salt, pepper, and a squeeze of lime juice.
