4 large russet potatoes

1 cup sour cream

1 cup cream cheese, softened

1/2 cup freshly grated cheddar cheese, plus more for topping

1/2 cup cooked and crumbled bacon

1/4 cup green onions, chopped (for garnish)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

Preheat the oven: Begin by preheating your oven to 400°F (200°C).

    Bake the potatoes: Place the russet potatoes directly on the oven rack and bake them for about 1 hour, or until they are fork-tender. Remove from the oven and allow them to cool slightly.

      Prep the dip ingredients: While the potatoes are cooling, in a large mixing bowl, combine the softened cream cheese, sour cream, garlic powder, onion powder, paprika, salt, and pepper. Mix well until smooth and creamy.

        Mash the potatoes: Once the baked potatoes are cool enough to handle, cut each potato in half and scoop out the insides into the mixing bowl with the cream cheese mixture. Be sure to leave a thin layer of potato skin intact for structure.

          Combine everything: Add the crumbled bacon and 1/2 cup of grated cheddar cheese to the bowl. Stir everything together until well combined and the mixture is creamy.

            Transfer to a baking dish: Spoon the loaded potato mixture into a greased baking dish, spreading it out evenly.

              Top with cheese: Sprinkle additional cheddar cheese on top of the dip for a cheesy crust.

                Bake the dip: Place the baking dish in the preheated oven and bake for an additional 20-25 minutes, or until the dip is hot and the cheese is bubbly and golden.
