For the Crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

For the Lime Mousse Layer:

1 cup heavy whipping cream

8 oz cream cheese, softened

1 cup powdered sugar

Zest of 2 limes

½ cup fresh lime juice

1 tsp vanilla extract

1 packet (about 2 ½ tsp) unflavored gelatin

3 tbsp water

For Garnish:

Lime slices

Whipped cream

Mint leaves (optional)

Instructions
 

Prepare the Crust:

    - In a medium bowl, mix the graham cracker crumbs, melted butter, and granulated sugar until combined.

      - Press the mixture firmly into the bottom of a 9-inch springform pan. Make sure it’s even and compact, then refrigerate while preparing the mousse.

        Make the Lime Mousse:

          - In a small bowl, sprinkle the gelatin over the water and let it sit for about 5 minutes until it blooms.

            - In a mixing bowl, beat the cream cheese with the powdered sugar, lime zest, lime juice, and vanilla extract until smooth and creamy.

              - In another bowl, whip the heavy cream to stiff peaks.

                - Gently fold the whipped cream into the cream cheese mixture until well combined.

                  - Heat the bloomed gelatin lightly, either in the microwave or on the stove, until it becomes liquid. Allow it to cool slightly. Then, fold it into the lime mousse mixture carefully, ensuring it doesn’t deflate the whipped cream.

                    Assemble the Cheesecake:

                      - Pour the lime mousse mixture over the chilled graham cracker crust, smoothing the top with a spatula.

                        - Cover and refrigerate for at least 4 hours, or overnight, to set.

                          Serve:

                            - Once set, carefully remove the cheesecake from the springform pan.

                              - Garnish with lime slices and dollops of whipped cream. Add fresh mint leaves if desired for an extra touch of freshness.
