1 can (15 oz) chickpeas, drained and rinsed

1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 red onion, finely chopped

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup olive oil

Juice of 2 lemons

1 teaspoon Dijon mustard

Salt and pepper to taste

1/2 teaspoon dried oregano

1/4 teaspoon red pepper flakes (optional)

Instructions
 

In a large mixing bowl, combine the chickpeas, halved cherry tomatoes, diced cucumber, and chopped red onion. Toss gently to mix.

    Add the crumbled feta cheese and chopped parsley to the salad.

      In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, dried oregano, salt, pepper, and red pepper flakes until well combined.

        Pour the dressing over the salad and toss gently until all the ingredients are well coated.

          Taste and adjust seasoning if necessary, adding more salt, pepper, or lemon juice to your preference.

            Let the salad sit for about 15 minutes to allow flavors to meld, or refrigerate for up to an hour before serving for a chilled option.
