Ingredients

4 boneless, skinless chicken breasts

1 cup all-purpose flour

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon garlic powder

1/2 teaspoon paprika

1/4 cup fresh lemon juice (about 2 lemons)

1/4 cup chicken broth

3 tablespoons capers, rinsed and drained

1/4 cup fresh parsley, chopped

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried thyme)

3 tablespoons olive oil

Lemon slices, for garnish

Instructions

Marinate the Chicken: In a shallow dish, whisk together lemon juice, chicken broth, capers, parsley, and thyme. Add the chicken breasts, turning to coat well. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

Prepare for Grilling: Preheat your grill or grill pan over medium-high heat. Remove the chicken from the marinade and pat dry with paper towels. Discard the marinade.

Dredge the Chicken: In a large bowl, combine the flour, salt, black pepper, garlic powder, and paprika. Dredge each chicken breast in the flour mixture, shaking off any excess.

Grill the Chicken: Drizzle the olive oil on the grill grates. Place the chicken breasts on the grill and cook for 5-7 minutes on each side, or until the internal temperature reaches 165°F (74°C) and has nice grill marks.

Make the Sauce: In a small saucepan over medium heat, combine 1/4 cup lemon juice, 1/4 cup chicken broth, and capers. Bring to a simmer and let cook for 3-4 minutes. Stir in chopped parsley and thyme right before serving.

Serve: Place the grilled chicken on a serving platter, drizzle with the lemon caper sauce, and garnish with fresh lemon slices and additional herbs, if desired.
