Ingredients

8 oz angel hair pasta

1 lb large shrimp, peeled and deveined

1 bunch asparagus, trimmed and cut into 2-inch pieces

4 cloves garlic, minced

1/4 cup olive oil

1 cup cherry tomatoes, halved

1/2 teaspoon red pepper flakes (optional)

Juice and zest of 1 lemon

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (optional)

Instructions

Cook the Pasta: Bring a large pot of salted water to a boil. Add the angel hair pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

Sauté the Asparagus: In a large skillet over medium heat, add 2 tablespoons of olive oil. When hot, add the asparagus pieces and sauté for about 3-4 minutes, or until they are bright green and tender yet crisp. Remove the asparagus from the skillet and set aside.

Cook the Shrimp: In the same skillet, add the remaining olive oil. Add the minced garlic and red pepper flakes (if using) and sauté for about 30 seconds until fragrant. Add the shrimp and cook for 2-3 minutes on each side until they turn pink and opaque. Remove shrimp from the skillet and set aside.

Combine Ingredients: In the same skillet, add the cherry tomatoes and cook for 2-3 minutes until they start to soften. Then add the cooked angel hair pasta, sautéed asparagus, and shrimp back into the skillet.

Add Flavor: Pour in the reserved lemon juice and lemon zest, then toss everything together. Gradually add some reserved pasta water a little at a time to reach your desired sauce consistency. Season with salt and pepper to taste.

Serve: Plate the pasta and garnish with chopped fresh parsley and grated Parmesan cheese, if desired.

Enjoy your vibrant, flavorful Lemon Garlic Angel Hair with Shrimp & Asparagus!
