  • 1 tablespoon lemon zest for extra lemon flavor
  • 1/2 cup powdered sugar for rolling the cookies

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  • Add the eggs, one at a time, mixing well after each addition, then blend in the lemon curd and lemon zest until fully incorporated.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
  • Chill the dough in the refrigerator for about 15 minutes to help it firm up.
  • Scoop tablespoons of dough and roll them into balls. Roll each ball in powdered sugar until fully coated, then place them on the prepared baking sheet, spacing them about 2 inches apart.
  • Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden but the centers are still soft. Allow them to cool on the baking sheet for 5 minutes before transferring to a wire rack.
