Ingredients
  

1 ½ cups all-purpose flour

1 cup fresh blueberries (or frozen, thawed)

½ cup granulated sugar

1 teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

Zest of 1 large lemon

½ cup unsalted butter, melted and cooled

2 large eggs

1 teaspoon pure vanilla extract

½ cup buttermilk

Juice of 1 lemon

Preheat Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease with cooking spray.

    Mix Dry Ingredients: In a large bowl, combine the all-purpose flour, sugar, baking powder, baking soda, salt, and lemon zest. Whisk until well blended.

      Mix Wet Ingredients: In another bowl, whisk together the melted butter, eggs, vanilla extract, buttermilk, and lemon juice until smooth.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients. Gently fold until just combined; do not overmix.

          Add Blueberries: Carefully fold in the blueberries, ensuring they are evenly distributed throughout the batter.

            Fill Muffin Tin: Divide the batter evenly among the muffin cups, filling each about ¾ full.

              Bake: Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean and the tops are lightly golden.

                Cool & Serve: Allow the muffins to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely. Enjoy them warm or at room temperature!
