4 large chicken legs (drumsticks)

3 tablespoons Jamaican jerk seasoning (store-bought or homemade)

2 tablespoons olive oil

2 tablespoons soy sauce

1 tablespoon honey

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

Juice of 1 lime

1 teaspoon allspice

Salt and black pepper to taste

Optional: Sliced scallions and fresh cilantro for garnish

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare Marinade: In a mixing bowl, combine the jerk seasoning, olive oil, soy sauce, honey, minced garlic, grated ginger, lime juice, allspice, salt, and pepper. Mix well to create a marinade.

      Marinate Chicken: Place the chicken legs in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is well-coated. Seal the bag or cover the dish, and marinate in the refrigerator for at least 1 hour, or overnight for maximum flavor.

        Bake the Chicken: Line a baking sheet with aluminum foil or parchment paper for easy cleanup. Arrange the marinated chicken legs on the sheet, ensuring they are spaced apart.

          Cooking Time: Bake in the preheated oven for 35-40 minutes, turning the chicken halfway through cooking. The chicken should be golden brown and reach an internal temperature of 165°F (75°C).

            Caramelize: For an extra BBQ flavor, brush some additional marinade over the chicken legs in the last 5 minutes of baking. You can also broil them for 2-3 minutes at the end for a crispy finish.

              Garnish and Serve: Once cooked, remove from the oven and let rest for 5 minutes. Garnish with sliced scallions and fresh cilantro before serving. Enjoy with your favorite sides like rice and peas, coleslaw, or grilled vegetables!
