Ingredients
  

2 large chicken breasts

4 oz cream cheese, softened

1/2 cup shredded cheddar cheese

1/4 cup crumbled bacon (cooked and crispy)

1-2 fresh jalapeños, finely diced (seeds removed for less heat)

1/2 tsp garlic powder

1/2 tsp onion powder

Salt and pepper to taste

1/2 cup breadcrumbs (for coating)

2 tbsp olive oil

Instructions
 

Preheat your oven to 375°F (190°C).

    In a mixing bowl, combine softened cream cheese, shredded cheddar cheese, crumbled bacon, diced jalapeños, garlic powder, onion powder, salt, and pepper. Mix until well combined.

      Using a sharp knife, carefully cut a pocket in each chicken breast, making sure not to cut all the way through.

        Stuff each chicken breast with the jalapeño cream cheese mixture, using toothpicks to secure the opening if necessary.

          Place breadcrumbs in a shallow dish. Dredge each stuffed chicken breast in breadcrumbs to coat them evenly.

            Heat olive oil in an oven-safe skillet over medium heat. Once hot, add the stuffed chicken breasts and sear for about 3-4 minutes on each side until golden brown.

              Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).

                Remove from the oven, let rest for a few minutes, then slice and serve hot.
