2 large cucumbers, diced

1 cup cream cheese, softened

1/2 cup shredded sharp cheddar cheese

1/2 cup diced jalapenos (fresh or pickled, depending on your heat preference)

1/4 cup green onions, sliced

1/4 cup crispy bacon bits

2 tablespoons lime juice

1 teaspoon garlic powder

Salt and pepper, to taste

Optional garnish: extra jalapeno slices and chopped cilantro

Instructions
 

Prep the Cucumbers: Start by washing the cucumbers thoroughly. Cut them in half lengthwise, scoop out the seeds with a spoon, and then dice them into bite-sized pieces. Place the diced cucumbers in a large mixing bowl.

    Mix the Dressing: In a separate bowl, combine the softened cream cheese, shredded cheddar cheese, diced jalapenos, sliced green onions, lime juice, garlic powder, salt, and pepper. Mix well until fully combined and creamy.

      Combine: Gently fold the creamy cheese mixture into the bowl of diced cucumbers. Be careful not to mash the cucumbers; you want to maintain their crunch.

        Add Bacon: Sprinkle the bacon bits into the salad and mix lightly to distribute evenly.

          Chill: Cover the salad with plastic wrap or a lid and refrigerate for at least 30 minutes to allow the flavors to meld together.

            Serve: Before serving, give the salad a good stir. Garnish with extra jalapeno slices and chopped cilantro, if desired. Serve chilled as a refreshing side dish or appetizer.
