1 lb (450g) gnocchi (store-bought or homemade)

2 boneless, skinless chicken breasts

2 tablespoons olive oil

1 teaspoon garlic powder

Salt and pepper to taste

1 cup heavy cream

1 cup freshly grated Asiago cheese

1 cup spinach (fresh or frozen)

1/2 cup sun-dried tomatoes (chopped, if packed in oil, drain them)

1 teaspoon Italian seasoning

Fresh basil leaves (for garnish)

Cook the Gnocchi: In a large pot of salted boiling water, cook the gnocchi according to package instructions, or until they float to the surface. Drain and set aside.

    Prepare the Chicken: Season the chicken breasts with garlic powder, salt, and pepper. In a large skillet over medium heat, add olive oil. Once the oil is hot, add the chicken breasts and sauté for about 6-7 minutes on each side, or until cooked through and golden brown. Remove from the skillet and let rest for a few minutes before slicing it into bite-sized pieces.

      Make the Sauce: In the same skillet, reduce the heat to low and pour in the heavy cream. Stir in the grated Asiago cheese until melted and smooth. Adjust seasoning with salt, pepper, and Italian seasoning.

        Combine Ingredients: Add the cooked gnocchi, sliced chicken, spinach, and sun-dried tomatoes to the skillet. Gently fold everything together until the spinach wilts and the gnocchi are well coated with the creamy sauce.
