1 cup semi-sweet chocolate chips

1/2 cup unsalted butter

1 cup powdered sugar

2 large eggs

2 large egg yolks

1 teaspoon vanilla extract

1/2 cup all-purpose flour

1/4 teaspoon salt

1/2 cup fresh raspberries

Cocoa powder (for dusting)

Whipped cream (for serving)

Fresh mint leaves (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a 12-cup muffin tin with cupcake liners or grease it well.

    Melt Chocolate and Butter: In a medium microwave-safe bowl, combine the semi-sweet chocolate chips and unsalted butter. Microwave in 30-second intervals, stirring in between until completely melted and smooth.

      Mix Dry Ingredients: In a separate bowl, whisk together the flour, powdered sugar, and salt until well combined.

        Combine Wet Ingredients: In the bowl with the melted chocolate mixture, add the eggs, egg yolks, and vanilla extract. Whisk until fully incorporated.

          Combine Mixtures: Gradually fold the dry ingredients into the chocolate mixture until just combined. Be careful not to overmix.

            Add Raspberries: Gently fold in the fresh raspberries, ensuring they are evenly distributed throughout the batter.

              Fill Muffin Tin: Spoon the batter into each cupcake liner, filling them about 2/3 of the way full.

                Bake: Place the muffin tin in the oven and bake for about 12-14 minutes, or until the edges are set but the centers are still slightly soft.

                  Cool Slightly: Once baked, remove the cupcakes from the oven and let them cool in the tin for about 5 minutes.

                    Serve: Carefully invert the cupcakes onto a plate and let them stand for another minute. Dust with cocoa powder, and serve warm with a dollop of whipped cream and a fresh mint leaf on top.
